His Jamaican family called him Sonny but in Canada, the family George Knight created for himself in his Lancaster Street West neighbourhood knew him simply as George.
This is where George first pushed his hands into the soil, first felt what it was like to watch something flourish under his care.
Coming out of such a system, George could have pursued an academic career as all his siblings did but George loved the land.
He was immediately shocked by the racism he faced.
If a woman pulled into the gas station, he would always check her car to make sure there wouldn’t be any unexpected problems that could leave her stranded.
George, a devout Mormon, also did the community gardens at the Church of Latter-day Saints on Strasburg Road, handing out the harvest to congregants.
The church’s bishop, Marvin Droese, recalls George’s devotion to his faith and the garden.
